  • While the sweet potatoes cool, preheat your oven to 375°F (190°C) to ensure it’s hot and ready for your pie.

Cooking

  • In a skillet, heat the olive oil over medium heat. Add the chopped shallot, parsley, thyme, and sage, sautéing for 2-3 minutes until fragrant and the shallots become translucent.
  • Next, introduce the chopped celery to the pan. Cook it for 4-5 minutes until it softens slightly, adding a refreshing crunch to the filling.
  • It’s time to combine everything! Stir in the frozen peas and carrots, the chopped turkey, 2 cups of the broth, 1/4 teaspoon salt, and black pepper. Bring this mixture to a boil, then reduce the heat and let it simmer for 8-10 minutes, allowing all the flavors to meld together.
  • In a small bowl, mix the remaining broth with the cornstarch. Stir this mixture into the filling, cooking for an additional 3-4 minutes until it thickens.
