Instructions
 

Preparation

  • In a large heavy-bottom pot or Dutch oven, heat the vegetable oil over medium heat.
  • Gradually whisk in the flour, stirring continuously to create a roux. Keep stirring for 15-20 minutes until it reaches a deep brown color.
  • Add the diced onion, green bell pepper, and celery, sauté for about 5 minutes until soft. Stir in minced garlic and cook for an additional minute.
  • Add chopped chicken and sliced sausage to the pot. Cook for 5-7 minutes until browned.
  • Pour in the drained diced tomatoes and chicken broth. Stir together, then add sliced okra, Cajun seasoning, dried thyme, bay leaves, salt, and pepper.

Cooking

  • Bring the mixture to a gentle simmer, cooking uncovered for 45 minutes to an hour. Adjust seasonings as needed. Remove bay leaves before serving.

Serving

  • Serve the gumbo over cooked white rice, garnished with chopped green onions and fresh parsley.
