Instructions
 

Preparation of Crust

  • In a mixing bowl, combine the crushed digestive biscuits and caster sugar.
  • Add the melted unsalted butter and mix until the texture resembles wet sand.
  • Press the mixture into the bottom and sides of a tart pan.
  • Set the crust aside while preparing the filling.

Preparation of Filling

  • Melt the chopped white chocolate in a heatproof bowl over simmering water.
  • In a separate bowl, whip the double cream until soft peaks form.
  • Gently fold the melted chocolate and additional butter into the whipped cream until fully incorporated.

Layering and Assembly

  • Pour half of the white chocolate filling into the prepared crust and spread evenly.
  • Scatter half of the fresh raspberries over this layer.
  • Pour the remaining filling on top and smooth it out.
  • Top with the remaining raspberries for a vibrant finish.

Chill and Serve

  • Cover the assembled tart with plastic wrap and refrigerate for at least four hours or overnight.
  • Once set, dust the top lightly with powdered sugar and serve chilled.

Notes

For a more intense raspberry flavor, swirl some raspberry puree into the filling before chilling. Store the tart in the refrigerator for up to three days or freeze slices for longer storage. Use good-quality white chocolate for the best flavor.
