Preparation

  • In a medium saucepan over low heat, combine the heavy cream, whole milk, and granulated sugar. Whisk gently but thoroughly until the sugar is completely dissolved and the mixture is warm to the touch.
  • Gradually whisk in the cocoa powder, ensuring that it integrates fully until the mixture is smooth with no lumps.
  • In a separate bowl, vigorously whisk the egg yolks until lightened in color. Slowly drip about a cup of the warm chocolate mixture into the yolks, whisking constantly to temper them.
  • Carefully pour the egg yolk mixture back into the saucepan. Stir continuously over medium heat, watching as it thickens (about 8-10 minutes).
  • Once thickened, remove from heat and fold in the vanilla extract and salt. If using chocolate chips, fold them in now.
  • Allow the mixture to cool to room temperature before transferring to the refrigerator. Chill for at least 4 hours.
  • Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
  • Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to firm up before serving.
