Summer Berry and Peach Cheesecake

Ingredients
  

For the crust

  • 1.5 cups 1 ½ cups graham cracker crumbs Crushed graham crackers for a buttery base.
  • 0.5 cups ½ cup unsalted butter, melted Ensure it's fully melted for mixing.

For the filling

  • 16 oz 16 oz cream cheese, softened Should be at room temperature for easy mixing.
  • 0.75 cups ¾ cup granulated sugar Adjust sweetness to taste.
  • 2 pieces 2 ripe peaches, sliced Fresh and tender slices for topping.
  • 1 cup 1 cup mixed berries (strawberries, blueberries, raspberries) Use a vibrant mix for color and flavor.
  • 1 tbsp 1 tbsp lemon juice Adds brightness to the filling.
  • 2 tsp 2 tsp agar-agar powder For thickening the cheesecake.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs with melted butter. Press the mixture into the bottom of a springform pan.
  • In a separate bowl, beat the softened cream cheese with granulated sugar until smooth. Add the lemon juice and beat until fluffy.
  • Prepare agar-agar according to the package instructions, typically boiling with water until dissolved, then mix it into the cream cheese filling.
  • Pour half of the cream cheese filling over the crust, arrange sliced peaches and half of mixed berries on top, then add remaining filling.
  • Cover and refrigerate for at least 4 hours or overnight to set.

Notes

Chill overnight for best results. Consider garnishing with fresh berries or mint leaves before serving.
