Casserole Base

  • 1 cup whole Greek yogurt or sour cream Creamy, tangy base
  • cup mayonnaise Provides a luscious texture
  • teaspoons chili powder Add to taste for spice
  • 1 teaspoon garlic powder Enhances savory flavor
  • 1 teaspoon kosher salt Essential for flavor balance

Main Ingredients

  • 3 cups corn (fresh or frozen) Sweet and crunchy
  • 3 cups cooked chicken, diced or shredded Tender meat for heartiness
  • 8 ounces cotija cheese, crumbled Salty and creamy richness
  • 3 tablespoons chopped fresh cilantro Adds freshness and color
  • 2 teaspoons fresh lime juice Optional garnish for zest

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, 1 teaspoon of chili powder, garlic powder, and kosher salt until smooth.
  • Stir in the corn, diced or shredded chicken, and about two-thirds of the cotija cheese.

Baking

  • Spray a 9x13-inch baking dish with cooking spray and transfer the mixture into the dish, spreading it evenly.
  • Top with remaining cotija cheese and sprinkle with the rest of the chili powder.
  • Cover with foil and bake for 30 minutes, then uncover and bake for another 10-15 minutes until hot and golden.
  • Allow to sit for 10 minutes before serving, then garnish with lime juice and cilantro.

Notes

For best results, make sure all ingredients are at room temperature before mixing. Adjust chili powder to personal spice preference.
