  • 1 small jalapeño, seeded and diced Optional, for heat.

Creamy Sauce

  • 1/3 cup mayonnaise For creamy texture.
  • ½ cup sour cream or Mexican crema Rich and tangy.
  • 2-3 Tbsp milk To loosen the sauce.

Garnishes

  • 1 ripe avocado, chopped For creaminess.
  • ½ cup cotija (or queso fresco) cheese, crumbled For a salty kick.
  • ½ cup fresh cilantro, chopped For vibrancy.
  • Lime wedges For serving.
  • Tajín or chili powder For a finishing touch.

Instructions
 

Preparation

  • Season your sliced chicken generously with salt, pepper, chili powder, cumin, paprika, garlic powder, and oregano.
  • In a medium skillet over medium heat, add the olive oil and sear the seasoned chicken until fully cooked, about 6-8 minutes.
  • Let the chicken rest on a cutting board before slicing into bite-sized pieces.

Cooking

  • In the same skillet, add corn, diced onion, and jalapeño (if using). Sauté over medium heat for about 4-5 minutes.
  • In a mixing bowl, whisk together mayonnaise, sour cream (or crema), lime juice, Tajín (or chili powder), and milk to achieve a smooth consistency.

Assembly
