Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  • In a medium bowl, combine the strawberries, granulated sugar, lemon juice, and cornstarch. Toss gently and set aside to marinate for about 10 minutes.
  • In a large bowl, whisk together the flour, rolled oats, brown sugar, baking powder, baking soda, and salt.

Combining Ingredients

  • Pour in the melted butter and vanilla extract into the dry ingredients and mix until it resembles coarse crumbs.
  • Press half of the crumb mixture firmly into the bottom of the prepared baking dish.
  • Evenly spread the strawberry mixture over the crumb layer.
  • Sprinkle the remaining crumb mixture evenly over the strawberries and gently press it down.

Baking

  • Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the filling is bubbling.
  • Let cool for about 10 minutes, then lift the bars out of the dish using the parchment paper, and allow them to cool completely on a wire rack.

Serving

  • Whip the heavy cream with powdered sugar until soft peaks form and dollop on top of the bars before serving.

Notes

Use ripe strawberries for maximum flavor. Experiment with other fruits like blueberries or raspberries. For a crunchier topping, increase the oats or add chopped nuts.
