Rice Preparation

  • 1 cup long-grain white rice fluffy and filling
  • 2 cups chicken or beef broth adding savory goodness

Queso Preparation

  • 1 cup whole milk creating a creamy texture
  • 1 cup shredded sharp cheddar cheese for a bold taste
  • 1 cup shredded Monterey Jack cheese for classic creaminess
  • 0.5 tsp ground cumin for added depth
  • 0.5 tsp chili powder for a hint of heat
  • 1 tbsp butter for a rich finish
  • 2 cloves garlic, minced providing robust flavor

Garnishes (Optional)

  • 1 avocado, sliced for freshness
  • 1 jalapeño, thinly sliced for a kick
  • 2 tbsp chopped fresh cilantro bringing brightness

Instructions
 

Preparation

  • Pat the steak dry with paper towels and rub with olive oil, paprika, ground cumin, garlic powder, salt, and pepper. Let it rest for about 15 minutes.
  • Rinse the rice under cold water until clear. Heat 1 tbsp olive oil in a medium pot, toast rice with garlic powder for 1-2 minutes, then add broth and simmer for 18-20 minutes.

Cooking

  • Heat a skillet over medium-high and sear steak for 4-5 minutes per side. Let it rest for 5-10 minutes, then slice thinly against the grain.
  • In the same skillet, melt butter and sauté garlic until fragrant. Stir in whole milk, bring to a simmer, then add cheeses gradually until smooth. Mix in ground cumin, chili powder, and adjust seasoning.

Serving

  • To serve, spoon rice into bowls, layer with steak, and pour creamy queso on top. Garnish with optional avocado, jalapeño, cilantro, and lime wedges.
