Ingredients
  

For the Filling

  • 500 g ground chicken Juicy and tender, this meat is the star of your samosa filling.
  • 2 medium potatoes, peeled and diced These will add a creamy texture that balances the spices perfectly.
  • 1 medium onion, finely chopped Sweet and aromatic, offering depth to the filling.
  • 2 cloves garlic, minced Adds a pungent kick that enhances the overall flavor profile.
  • 1 tablespoon fresh ginger, grated This fresh ingredient infuses a zesty warmth.
  • 1 teaspoon cumin seeds Nutty and aromatic, they provide a warm base flavor.
  • 1 teaspoon coriander powder Adds a mild, citrusy flavor that complements the spices.
  • 1 teaspoon garam masala A blend that brings complexity and warmth.
  • 0.5 teaspoon turmeric powder For color and an earthy, mildly bitter flavor.

For the Dough

  • 2 cups all-purpose flour This will form the crispy, flaky dough.
  • 4 tablespoons ghee or vegetable oil Essential for creating a rich dough consistency.

Instructions
 

Prepare the Dough

  • In a mixing bowl, combine the flour, ghee (or vegetable oil), and a pinch of salt. Slowly add water while kneading the mix until a smooth dough forms.
  • Cover the dough with a damp cloth and set it aside for 30 minutes.

Cook the Filling

  • In a pan heated over medium heat, add a splash of oil and sauté the cumin seeds until they pop and release their nutty aroma.
  • Add the finely chopped onion, minced garlic, and grated ginger. Cook until the onions become translucent and fragrant, about 5 minutes.

Add Chicken and Spices

  • Stir in the ground chicken and finely chopped green chilies. Mix well, making sure all the ingredients are combined.
  • Season with coriander powder, garam masala, turmeric powder, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned.

Incorporate Potatoes

  • Add the diced potatoes to the pan and stir to combine. Cover and cook for 10-15 minutes until the potatoes are tender.
  • Remove from heat and fold in the freshly chopped cilantro. Allow the filling to cool.

Shape the Samosas

  • Divide the rested dough into small balls. Roll each ball into a thin circle, approximately 6 inches in diameter.
  • Cut the circle in half to form two semi-circles. Take one semi-circle, fold it over to create a cone and seal the edges.
  • Fill the cone with the chicken mixture and seal the open edge firmly.

Fry the Samosas

  • In a deep frying pan, heat oil until it reaches 350°F (175°C). Carefully add the samosas and fry until golden brown, about 4-5 minutes.
  • Use a slotted spoon to drain the oil and transfer to paper towels.

Serve and Enjoy

  • Serve the Spicy Chicken Samosas hot with mint chutney or yogurt sauce.

Notes

To enhance flavor, consider adding lemon juice to the filling. Adjust green chilies to cater to taste preference. For quicker preparation, pre-make the filling a day in advance.
