Ingredients
  

For the sauce

  • 2 tablespoons olive oil
  • 1 whole onion, chopped
  • 2 whole bell peppers (red and yellow), diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes

For the eggs and garnish

  • 4 large eggs
  • Fresh cilantro or parsley, optional
  • Feta cheese, crumbled (optional)

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Sauté the chopped onion until translucent, about 5 minutes.
  • Add the diced bell peppers and cook for an additional 3-4 minutes.
  • Incorporate the minced garlic, cumin, smoked paprika, and cayenne pepper. Stir for about a minute.
  • Pour in the crushed tomatoes, seasoning with salt and black pepper. Stir and let it simmer for 10 minutes.

Cooking

  • Create four small wells in the mixture and crack an egg into each. Cover the skillet and cook for 5-8 minutes until eggs are cooked to your liking.
  • Garnish with fresh cilantro or parsley and crumbled feta cheese if desired.

Notes

Ensure your skillet is large enough to avoid overcrowding. Always taste the sauce before adding the eggs and adjust seasoning as necessary.
