Instructions
 

Preparation

  • Heat a large skillet or griddle over medium-high heat and drizzle olive oil.
  • Divide the ground beef into 8 equal portions and gently roll into loose balls.

Cooking the Patties

  • Place the beef balls on the skillet, and smash each down to about 1/4 inch thick. Season with salt and pepper.
  • Cook for about 3 minutes until browned, then flip and add shredded cheddar cheese on each patty. Cook for another 2 minutes until cheese melts.

Prepare Tortillas

  • Warm the tortillas in a separate skillet for about 15 seconds on each side.

Assemble Tacos

  • Place a smashed patty in the center of each warm tortilla. Top with lettuce, tomato, pickles, and onion.
  • Mix mayonnaise, ketchup, and mustard in a small bowl, then drizzle over the tacos.
  • Fold the tortillas over the toppings and serve warm.

Notes

For a healthier option, consider using ground turkey or chicken, whole wheat tortillas, or avocado slices. Avoid overworking the beef to prevent tough patties.
