Preparation

  • Begin by placing the chicken, diced onion, sliced celery, diced carrots, minced garlic, chicken broth, water, bay leaves, oregano, salt, and pepper into your slow cooker.
  • Cook on LOW for 4–6 hours or on HIGH for 2–3 hours until the chicken is cooked through and the vegetables are tender.
  • Once cooked, remove the chicken to a plate; shred or chop it, discarding any bones if used.
  • Add the orzo (or rice) and the freshly squeezed lemon juice (plus lemon zest) into the pot and stir well to combine.
  • Cover and cook on HIGH (or continue on LOW) for another 15–30 minutes, or until the pasta/rice is tender.
  • After cooking, remove the bay leaves. Taste and adjust salt, pepper, and lemon for personal preference.
  • Garnish with chopped parsley before serving.

Notes

Searing the chicken can add extra flavor. Use high-quality broth for best taste and don’t skip the zest for aromatic enhancement. Always taste and adjust seasonings before serving.
