Preparation

  • In a 5-quart (or larger) slow cooker, combine garlic, bell pepper, onion, crushed tomatoes, chicken breast, chicken broth, ½ cup of Parmesan cheese, basil, oregano, salt, pepper, and optional red pepper flakes. Stir well.

Cooking

  • Cover and cook on low for about 7½ hours or on high for approximately 3½ hours.
  • Remove the chicken breast and shred it using two forks.
  • Return the shredded chicken to the slow cooker. Add uncooked pasta and stir well. Cover and cook on high for an additional 20–30 minutes until the pasta is al dente.
  • If the soup is too thick, add more broth. For richness, stir in optional butter until melted.
  • Serve in bowls, garnished with remaining Parmesan cheese and fresh basil or parsley.

Notes

Consider adding other vegetables like carrots or zucchini for a heartier soup. For a creamy texture, add a splash of heavy cream before serving. Adjust the amount of red pepper flakes based on your spice preference.
