For the sloppy joe mixture

  • 1/4 cup paleo ketchup A healthier alternative.
  • 2 tablespoons coconut aminos A soy sauce substitute.
  • 1 tablespoon tomato paste For richness.
  • 1 teaspoon chili powder Adds a subtle heat.
  • 1 tablespoon apple cider vinegar Balances the dish.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 medium onion, diced Adds depth to the mixture.
  • to taste salt and pepper Essential seasonings.

Instructions
 

Preparation

  • Preheat your oven to 415°F (210°C).
  • Slice the sweet potato into 1/4 inch rounds, toss them with olive oil and salt, and spread on a baking sheet.
  • Roast the sweet potatoes for about 10-12 minutes, until golden and tender.

Cooking

  • In a skillet, heat ghee or olive oil over medium-high heat.
  • Add the minced garlic and diced onions, cooking until fragrant and translucent (2-3 minutes).
  • Add the ground beef to the skillet, cooking until browned, then drain excess fat.
  • Stir in the Dijon mustard, paleo ketchup, coconut aminos, salt, pepper, tomato paste, chili powder, and apple cider vinegar, allowing it to simmer for a few minutes.

Assembly

  • Layer the roasted sweet potatoes in bowls and top with the sloppy joe mixture.

Notes

For extra spice, add jalapeños or hot sauce. Substitute ground turkey for a leaner option. Garnish with fresh herbs.
