Instructions
 

Preparation

  • Preheat your oven to 400 °F (200 °C) and line a sheet pan with foil or parchment paper.
  • In a large bowl, combine the shrimp, bell peppers, and onion.
  • In a small bowl, whisk together the olive oil with chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper until well blended.
  • Pour the spiced oil over the shrimp and vegetables, tossing until each piece is well coated.
  • Spread the mixture on the sheet pan in a single layer.

Cooking

  • Bake for 8-10 minutes until the shrimp are opaque and the veggies are tender.
  • Optionally, broil for an additional 1-2 minutes for a charred finish.
  • Remove from the oven and squeeze fresh lime juice over the top. Garnish with cilantro.

Serving

  • Serve warm in tortillas with your favorite toppings.
