  • 2 lbs beef chuck, cut into 1-inch pieces Offering a rich and succulent base.

Instructions
 

Preparation

  • Set the Instant Pot to the sauté function and add the olive oil.
  • Once the oil is shimmering, add the beef chunks in small batches and sear until browned on all sides, about 5 minutes per batch. Remove and set aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes.

Cooking

  • Return the seared beef to the pot and add the sliced carrots, diced potatoes, beef broth, tomato paste, dried thyme, rosemary, bay leaf, and season with salt and pepper. Stir well.
  • Close the Instant Pot lid securely, set the valve to sealing, select the manual high-pressure setting, and cook for 35 minutes.
  • Once cooking is complete, allow for a natural pressure release for 10 minutes before carefully performing a quick release.
  • Stir in the frozen peas. If a thicker stew is desired, mix cornstarch with water and add it to the pot, sautéing until thickened.
  • Taste and adjust seasoning before serving.

Notes

Serve alongside crusty bread, over rice, or creamy mashed potatoes. Stew is even better the next day as flavors meld.
