  • 1 medium onion, finely chopped Aromatic and slightly sweet, enhancing the flavor profile.
  • 3 cloves garlic, minced Fragrant and robust, adding depth to your hash.
  • 1 large bell pepper, diced Colorful and crisp, introducing a fresh crunch.
  • 2 teaspoons smoked paprika Smoky and warm, providing a comforting essence.
  • 1 teaspoon cumin Earthy and nutty, complementing the savory meat.
  • Salt and pepper to taste Essential seasonings to enhance all the flavors.
  • 2 tablespoons olive oil Rich and smooth, for sautéing.
  • ¼ cup fresh parsley, chopped (for garnish) Vibrant and fresh, adding a pop of color.
  • 4 large eggs (optional) Creamy and rich, for those who want an extra indulgence.

Instructions

Preparation

  • Place the diced potatoes into a large pot. Cover with water and bring to a rolling boil. Cook for about 10 minutes until slightly tender, then drain and set aside.

Cooking the Beef

  • In a large skillet, heat the olive oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned and crumbly. Drain excess fat.

Sautéing the Vegetables

  • In the same skillet, add onion and bell pepper. Sauté for about 5 minutes until tender and then add minced garlic, cooking for an additional minute.

Combining Ingredients

  • Return the drained potatoes to the skillet and stir together with the beef and vegetables, mixing well.

Seasoning and Crisping

  • Add smoked paprika and cumin, stirring thoroughly. Cover and cook for about 10-12 minutes, stirring occasionally, until potatoes are crispy.

Adding Eggs (Optional)

  • If using eggs, create small wells in the hash, crack an egg into each well, cover the skillet, and cook to your desired doneness.

Garnishing and Serving

  • Sprinkle fresh parsley over the dish just before serving to add color and freshness.

Notes

For best results, dice potatoes uniformly and do not overcrowd the pan when browning the beef.
