Ingredients
  

Egg Mixture

  • 6 large large eggs
  • 0.5 cup milk
  • 1 cup shredded cheese (a creamy cheddar and goat cheese blend)

Vegetables and Herbs

  • 0.5 cup cherry tomatoes, halved
  • 1 small zucchini, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh herbs (basil, parsley, and chives), chopped

Other Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the eggs and milk. Add salt and pepper to taste.
  • Stir in the shredded cheese, diced zucchini, halved cherry tomatoes, finely chopped red onion, and fresh herbs until well combined.

Cooking

  • In an oven-safe skillet, heat the olive oil over medium heat. Pour in the egg mixture and cook undisturbed for 3-4 minutes.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until golden brown and puffed.
  • Allow the frittata to cool for a few minutes before slicing into wedges.

Notes

Be careful not to overcook the frittata as it will continue to cook after being removed from the oven. For a healthier option, consider using egg whites or a lower-fat milk alternative. Experiment with different vegetables and cheeses based on your preference.
