Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts in a lightly greased baking dish in a single layer.
  • In a small bowl, mix together chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • Sprinkle the seasoning blend over both sides of the chicken and rub it in gently.
  • Pour the salsa over the chicken, spreading it evenly.

Cooking

  • Bake uncovered for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and sprinkle the shredded cheese over the chicken, then return to the oven for another 5 minutes until the cheese is melted.
  • Allow to rest for 5 minutes before serving, and garnish with fresh cilantro if desired.

Notes

For best results, preheat your oven and check the internal temperature of the chicken. Allowing the chicken to rest after cooking helps the juices redistribute.
