Ingredients
  

For the filling

  • 1 cup fresh spinach, chopped
  • 0.5 cup roasted red peppers, diced
  • 1 cup mozzarella cheese, shredded
  • 0.25 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 0.5 teaspoon paprika

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the chopped spinach, diced roasted red peppers, shredded mozzarella, softened cream cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated.
  • Carefully slice a pocket into each chicken breast without cutting all the way through.
  • Generously stuff each chicken breast with the creamy mixture and secure the openings with toothpicks or kitchen twine if necessary.

Cooking

  • In a skillet over medium-high heat, heat the olive oil. Season each stuffed chicken breast with salt, pepper, and paprika.
  • Once the oil is hot, sear the chicken for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
  • Let the chicken rest for 5 minutes before serving.

Notes

Consider marinating the chicken for a few hours for deeper flavor. Also, don’t overstuff the chicken to prevent spillage during cooking.
