Ingredients
  

Caramel Base Ingredients

  • 1 cup 100% pure pomegranate juice Ensure juice is pure for best flavor.
  • 1 cup granulated sugar
  • ½ cup heavy cream Can be substituted with coconut cream for dairy-free.
  • 4 tbsp unsalted butter Can be substituted with coconut oil for dairy-free.
  • 1 tsp agar-agar powder Helps caramels set properly.
  • ¼ tsp salt Balances sweetness.

Preparation

  • Measure out all the ingredients and set them aside.

Reduce Juice

  • In a saucepan over medium heat, simmer the pomegranate juice until reduced by half and thickened.

Mix Sugar and Cream

  • Whisk together the granulated sugar and heavy cream in a mixing bowl until smooth and creamy.

Combine Mixtures

  • Add the sugar-cream mixture to the saucepan with the reduced pomegranate juice and stir until reaching soft ball stage (around 235°F or 113°C).

Finishing Touches

  • Remove from heat and stir in unsalted butter, agar-agar powder, and salt until well combined.

Set Caramels

  • Pour the mixture into molds or a greased baking dish. Allow to cool at room temperature before refrigerating for at least two hours until firm.

Notes

Serve as a treat after meals or give as gifts. Can be paired with tea or coffee. Note that these can also be frozen for later enjoyment.
