Preparation

  • Start by heating the olive or sesame oil in a large pan over medium heat.
  • Add the chicken breast pieces to the heated pan and cook for about 6 to 8 minutes on each side until browned and fully cooked through. Remove from the pan and set it aside.
  • In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the low sodium soy sauce, pineapple juice, honey, and rice vinegar. Stir to combine and bring to a gentle simmer.
  • In a small bowl, mix the cornstarch with water to create a slurry. Stir this into the simmering sauce and cook for another 2 to 3 minutes until thickened.
  • Add the cooked chicken back into the pan along with the pineapple chunks and diced red bell pepper. Stir to coat evenly in the sauce.
  • Incorporate the cooked rice into the pan, folding it carefully into the mixture. Heat through for approximately 2 minutes.
  • Remove from heat and garnish with chopped green onions and sesame seeds before serving.

Notes

Ensure the chicken is cooked fully; it should not be pink in the center. Adjust the sweetness of the sauce by varying honey or brown sugar. Include more vegetables for added nutrients and color. For a vegetarian version, substitute chicken with tofu.
