Ingredients
  

For the crust

  • 1.33 cups all-purpose flour Provides a tender base

  • 6 tablespoons ice water To bring dough together

For the peach filling

  • 1 pound ripe peaches About 3-4 medium-sized
  • 0.25 cup granulated sugar For sweetness
  • 1 tablespoon all-purpose flour Thickens the filling
  • 0.5 teaspoon ground cinnamon Adds warmth to flavors
  • 0.5 teaspoon pure vanilla extract For aroma
  • 0.5 tablespoon unsalted butter Cut into small pieces to dot filling

Instructions
 

Preparation of Dough

  • In a large mixing bowl, combine the flour, granulated sugar, and sea salt. Cut in the very cold butter until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing just until the dough comes together.

Chill the Dough

  • Shape the dough into a disk, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

  • While the dough chills, slice the peaches and toss them with granulated sugar, flour, cinnamon, and vanilla extract in a bowl. Let this sit for a few minutes.

Roll Out the Dough

  • Preheat the oven to 400°F (200°C). Lightly flour your work surface and roll out the chilled dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.

Assemble the Galette

  • Spoon the peach mixture into the center of the rolled-out dough, leaving a 2-inch border. Fold the edges of the dough over the filling.

Finish the Galette

  • Dot the filling with small pieces of butter, brush the crust with beaten egg, and sprinkle coarse sugar over the top.

Bake and Serve

  • Bake for 30-35 minutes or until the crust is golden brown and the peaches are bubbly. Let it cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. For a healthier twist, consider using whole wheat flour or reducing sugar in the filling.
