  • 1 teaspoon dried thyme contributes mildly minty, herbal notes
  • Salt to taste
  • Freshly cracked pepper to taste
  • 1 cup halved cherry tomatoes juicy and sweet
  • 1 cup trimmed asparagus adds a vibrant green crunch

  • Lemon slices for serving

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, oregano, thyme, salt, and pepper.
  • Place salmon fillets in a baking dish or on a lined baking sheet. Pour half of the marinade over the salmon and set the remaining marinade aside.

Cooking

  • Garnish with fresh parsley and lemon slices before serving.

Notes

To ensure the dish turns out perfectly, choose fresh salmon and avoid overcooking. Rotate the vegetables during baking for even roasting.
