  • 5–6 pieces beef short ribs Full of rich flavor
  • 1.5–2 pounds boneless beef roast Cut into large chunks
  • 3 ears corn Offering sweet crunch
  • 0.5 head cabbage Cut into hearty wedges
  • 1–2 pieces carrots Sliced for sweetness
  • 4–6 pieces yellow potatoes Quartered for heartiness
  • 1 piece zucchini Sliced (optional)
  • 8 ounces tomato sauce
  • 2–3 tablespoons garlic powder
  • 2 teaspoons ground cumin
  • to taste beef bouillon
  • to taste black pepper
  • enough to fill a large stockpot water
  • 1 piece limes Cut into wedges (for serving)

Preparation

  • Fill a large stockpot with about 12-14 cups of water and bring it to a boil.
  • Add garlic powder, ground cumin, black pepper, and beef bouillon to the pot.
  • Carefully add the short ribs and beef chunks, allowing the mixture to simmer for 45-60 minutes.
  • Stir in the tomato sauce, adjusting seasoning as necessary.
  • Add the sliced carrots and quartered potatoes to the pot, simmering for an additional 10-15 minutes.
  • Incorporate zucchini, corn, and cabbage, and let everything simmer for another 5-10 minutes.
  • Turn off the heat and let the soup rest for 10-15 minutes before serving.
  • Serve in bowls garnished with lime wedges.

Notes

For deeper flavor, add fresh herbs like thyme or bay leaves. Feel free to experiment with seasonal vegetables.
