- 25 pieces Golden Oreos, crushed
- 6 tablespoons butter, melted
Cheesecake Filling Ingredients
- 32 ounces cream cheese, room temperature Ensure it's at room temperature for a smooth blend.
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces cool whip, extra creamy if possible Can substitute with homemade whipped cream.
- 16 pieces Fireworks Oreos, chopped Adds a fun colorful element.

Instructions
Prepare the Crust
- Crush the 25 Golden Oreos into fine crumbs using a food processor or by rolling in a plastic bag.
- Combine crushed cookies with 6 tablespoons of melted butter in a mixing bowl and stir until wet and sandy.
- Press the mixture firmly into the bottom of a 9x13 inch baking dish.
- Place the dish in the freezer to chill for about 15 minutes.
Make the Cheesecake Filling
- Beat 32 ounces of room temperature cream cheese until smooth.
- Gradually add 3/4 cup of powdered sugar and 1 teaspoon of vanilla extract, mixing until well combined.
- Gently fold in 8 ounces of cool whip and then the chopped Fireworks Oreos.
Assemble the Bars
- Retrieve the chilled crust and pour the cheesecake filling over it, spreading it evenly with a spatula.
- Cover the baking dish with plastic wrap or foil and refrigerate for at least 4 hours.
Garnish and Serve
- Remove from the refrigerator and sprinkle more chopped Fireworks Oreos and pop rocks on top before serving.
- Cut into bars and serve on a festive platter.
Notes
Make sure cream cheese is at room temperature for a smooth filling. You can also serve the bars in individual cupcake liners for easier serving.
