Ingredients
  

For the shortbread base

  • 1 cup unsalted butter (softened) Provides a luscious foundation

For the caramel layer

  • 1 can condensed coconut milk (14 oz) Rich and creamy, akin to classic caramel

For the chocolate topping

  • 1 cup dark chocolate chips For a decadent topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  • Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  • Gradually incorporate the all-purpose flour into the butter and sugar mixture until a crumbly dough forms.
  • Press the dough gently into the bottom of the baking dish.

Baking the Shortbread

  • Bake for 20-25 minutes or until golden brown and allow to cool completely in the dish.

Making the Caramel

  • In a saucepan, combine the condensed coconut milk and a pinch of salt over medium heat, stirring until thickened.
  • Pour the caramel mixture over the cooled shortbread and spread evenly.

Adding the Chocolate Layer

  • Melt the dark chocolate chips and coconut oil until smooth, then drizzle over the caramel layer.

Chilling and Serving

  • Refrigerate for at least two hours before cutting into squares.

Notes

For best results, use high-quality dark chocolate and allow the caramel to thicken properly. Store in an airtight container for up to a week or freeze for up to three months.
