  • ¼ cup red onion, thinly sliced For a crisp, tangy crunch.
  • ½ cup sour cream Creamy and tangy balance.
  • 2 tbsp mayonnaise Adds richness to the sauce.
  • ½ cup cotija cheese (or feta/queso fresco), crumbled Enhances the dish’s authenticity.
  • 1 tsp chili powder (for corn topping) For added flavor and kick.

Instructions
 

Marinating the Chicken

  • In a mixing bowl, combine lime juice, oil, chili powder, cumin, garlic powder, salt, and black pepper.
  • Add the chicken thighs, ensuring they are well-coated with the marinade. Let them soak up flavors for 15 to 30 minutes.

Cooking the Chicken

  • Preheat your grill or skillet to medium-high heat.
  • Once hot, place the marinated chicken on the grill or in the skillet. Cook for 6-8 minutes on each side until thoroughly cooked.
  • Once done, let the chicken rest on a cutting board for a few minutes before slicing.

Preparing the Corn Topping

  • If using fresh corn, grill or sauté it until slightly charred.
  • In a bowl, mix the corn with red onion, sour cream, mayonnaise, crumbled cotija cheese, chili powder, salt, and a squeeze of lime.

Warming the Rice

  • Gently warm the pre-cooked rice on the stovetop or in the microwave until heated through.

Assembling the Bowl
