Preparation

  • Place the sliced chicken breasts in a large bowl. Toss them with olive oil, dried oregano, dried thyme, salt, and pepper until coated.

Cooking

  • Heat a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until golden brown.
  • Add the sliced red onion and minced garlic to the skillet. Cook for an additional 2-3 minutes until the onion becomes translucent.
  • Toss in the bell peppers, zucchini, and halved cherry tomatoes. Stir-fry for another 4-5 minutes until the vegetables are tender yet crisp.
  • Drizzle the fresh lemon juice over the stir fry and toss everything to combine.
  • Remove from heat and serve hot, topped with crumbled feta cheese and a sprinkle of fresh parsley.

Notes

For added depth of flavor, consider marinating the chicken earlier or even overnight. Fresh herbs like basil or mint can be substituted for parsley.
