Preparation

  • Preheat your oven to 425°F (220°C) to prepare for roasting the potatoes.
  • In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  • Spread the potatoes on a baking sheet in a single layer and bake for 25-30 minutes, turning halfway through.
  • While the potatoes are baking, mix the black beans and corn in a small bowl.
  • Once the potatoes are golden and crispy, remove them from the oven and let cool slightly.

Assembly

  • In serving bowls, layer the baked potatoes as the base.
  • Top with the black bean and corn mixture.
  • Add diced avocado, cherry tomatoes, and red onion on top.
  • Finish with a dollop of sour cream, sprinkle of cilantro, and a squeeze of lime juice.

Notes
