  • In a medium bowl, combine sweetened condensed coconut milk, lemon zest, and lemon juice. Stir until smooth.
  • In a microwave-safe bowl, melt dairy-free white chocolate chips in 20-second bursts, stirring in between.
  • In another bowl, whisk together coconut flour and agar-agar. Gradually mix into the wet ingredients until combined.
  • Cover and refrigerate the mixture for about an hour to firm it up.

Assembly

  • Scoop tablespoon-sized portions and roll them into smooth balls.
  • Dip each truffle into melted white chocolate, ensuring they are well coated.
  • Place coated truffles on a parchment-lined baking sheet and let cool until chocolate hardens.
