Instructions
 

Prepare the Crust

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed graham crackers, shredded coconut, melted butter, and granulated sugar. Mix until well incorporated. Press firmly into a 9-inch tart pan. Bake for about 10 minutes, or until lightly golden. Allow to cool completely.

Make the Mousse

  • In a separate bowl, whip the heavy cream with an electric mixer until soft peaks form. In another bowl, mix the strawberry puree, lemon curd, powdered sugar, vanilla extract, and lemon zest. Blend until smooth.

Fold the Mixtures

  • Gently fold the whipped cream into the strawberry-lemon mixture until no streaks remain. The mixture should be light and airy.

Fill the Tart

  • Spoon the mousse into the cooled tart shell, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 2 hours to set.

Garnish and Serve

  • Before serving, decorate the top with sliced strawberries and add fresh mint leaves. Serve chilled for the best flavor.

Notes

For added texture, consider adding crushed nuts or cookie crumbles to the crust. If you prefer a less sweet mousse, reduce the amount of powdered sugar. Experiment with different berries such as raspberries or blueberries for a unique twist.
