Ingredients
  

For the crust

  • 3/4 cup crushed graham crackers The base of your dessert, these crispy crumbs bring texture and a hint of sweetness.

For the mousse

  • 2 1/2 Tbsp fresh lemon juice Offers vibrant acidity that elevates the mousse and provides a refreshing twist.
  • 1 1/2 cups heavy cream Light and fluffy, this cream gives the mousse its characteristic airy texture.
  • 12 oz cream cheese (softened) A decadent and creamy base that forms the heart of your cheesecake mousse.
  • 10 oz jar of lemon curd This luscious spread infuses the dish with a concentrated burst of lemon flavor.

For the gelatin

  • 1 Tbsp vegan gelatin Dissolve in lemon juice and a bit of water to help the mousse set.

Instructions
 

Preparation

  • In a mixing bowl, combine the crushed graham crackers with the granulated sugar and melted salted butter. Stir until the mixture resembles wet sand. Press this mixture into the bottom of individual dessert cups and set aside to firm up.
  • In a small bowl, dissolve the vegan gelatin in fresh lemon juice and a bit of water; let it bloom.

Combining Ingredients

  • In a large mixing bowl, whip the heavy cream on medium-high speed until it reaches stiff peaks.
  • In another bowl, whip the softened cream cheese until smooth, then mix in the lemon curd.
  • Gently heat the gelatin mixture until it dissolves fully, then pour it into the cream cheese mixture and stir well.

Assembly

  • Gently fold the whipped cream into the lemon cheese mixture until it is smooth and fluffy, being careful not to deflate the cream.
  • Fill the prepared crusts with the cheesecake mousse.

Chilling

  • Refrigerate the mousse for at least two hours to set. When you’re ready to serve, garnish with fresh lemon zest or berries.

Notes

For the crust, you can substitute regular graham crackers with gluten-free options. Store-bought lemon curd can be used for quicker preparation. Adding a splash of vanilla extract can enhance flavor.
