  • 3/4 cup frozen spinach (chopped, thawed, and drained) or 1.5 cups fresh chopped spinach Nutrient boost and color.
  • 1/4 cup sundried tomatoes, chopped or sliced Adds tangy sweetness.
  • 4 ounces gorgonzola crumbles or blue cheese For a robust flavor.
  • 1 cup mozzarella cheese, grated Adds meltiness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with vegetable oil and season with salt and black pepper. Place cut-side down on a lined baking sheet and roast for 30-40 minutes until tender.

Cook the Steak

  • Season your chosen cut of steak generously with salt and pepper. Heat a skillet over medium heat and cook the steak to your desired level of doneness. Let the steak rest for a few minutes before slicing it into strips.

Make the Alfredo Sauce

  • Melt the unsalted butter over medium-low heat in a saucepan. Pour in the heavy cream and add the ground nutmeg. Gradually add the Parmesan cheese, stirring continuously until melted and creamy.

Combine Ingredients

  • Fluff the insides of the roasted spaghetti squash with a fork. Mix in the cooked steak strips, thawed spinach, sundried tomatoes, gorgonzola crumbles, and half of the creamy Alfredo sauce.

Bake to Perfection

  • Sprinkle the mozzarella cheese on top of the spaghetti squash mixture. Return it to the oven for an additional 15 minutes. For an extra crispy finish, broil the top for a few minutes, watching carefully to avoid burning.

Serve and Enjoy

  • Serve immediately, drizzling the remaining Alfredo sauce on top.

Notes

Choosing cuts like flank or skirt steak can be more affordable yet flavorful. Feel free to experiment with garlic powder or Italian seasoning in the sauce. For leftovers, consider a baked casserole makeover.
