  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 unit zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 bunch fresh parsley, chopped for garnish

Preparation

  • Preheat your oven to 425°F (220°C). A hot oven ensures a beautiful sear on the chicken, locking in juices for a tender bite.
  • In a small bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, lemon zest, and lemon juice.
  • Place the chicken breasts in a resealable plastic bag or bowl, and pour the marinade over them. Seal the bag or cover the bowl, and refrigerate for at least 30 minutes.
  • After marinating, remove the chicken from the fridge and let it sit at room temperature for 10-15 minutes.

Cooking

  • Arrange the marinated chicken on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.
  • Allow the chicken to rest for 5 minutes before serving, garnished with fresh parsley.

Notes

For extra flavor, consider adding a splash of balsamic vinegar or a teaspoon of Dijon mustard to the marinade. If you have time, marinate for a few hours or overnight to enhance the flavor further.
