Instructions

Cooking

  • Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until it begins to brown, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet. Stir for about 2-3 minutes until the onion softens and becomes translucent.
  • Stir in the sliced bell peppers and corn. Cook for another 3-4 minutes until the peppers are tender.
  • Pour in the chicken broth, BBQ sauce, and honey. Stir until combined, then bring to a gentle simmer.
  • Add the pasta to the skillet. Cover and let it cook according to the pasta package instructions, about 10-12 minutes.
  • Once the pasta is cooked and liquid is absorbed, season with salt and pepper. Sprinkle with Parmesan cheese and stir until melted.
  • Remove from heat and garnish with chopped parsley before serving.

Notes

For an extra kick, consider adding crushed red pepper flakes when sautéing the sausage. Use low-sodium chicken broth for a lighter dish. Feel free to add spinach or kale for an added nutritional boost.
