Ingredients

For the bread

  • 2.5 cups All-Purpose Flour The base of your bread, providing just the right amount of structure.
  • 1 tablespoon Baking Powder Helps your loaf rise beautifully, ensuring it’s light and fluffy.
  • 1 cup Granulated Sugar Adds a touch of sweetness that balances the tart cranberries.
  • 0.5 teaspoon Salt Enhances flavors.
  • 2 large Eggs Essential for binding the ingredients together and providing richness.
  • 0.5 cup Vegetable Oil Imparts moisture, giving the bread a tender crumb.
  • 0.5 cup Fresh Orange Juice Lends a delightful citrusy freshness.
  • 1 zest Orange Enhances the bread’s aromatic quality.
  • 2 cups Fresh Cranberries The star ingredient providing bursts of flavor.

For the glaze

  • 1 cup Powdered Sugar For a sweet glaze that contrasts with the tangy cranberries.
  • 2 tablespoons Milk Adds creaminess to your glaze.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  • In another bowl, whisk the eggs. Add the vegetable oil, fresh orange juice, and orange zest, mixing well.
  • Gradually combine the wet and dry ingredients, stirring gently until just incorporated.
  • Fold in the fresh cranberries evenly throughout the batter.
  • Pour the batter into the prepared loaf pan, smoothing it out evenly.

Baking

  • Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Glazing

  • For the glaze, mix the powdered sugar with milk until smooth, then drizzle over the cooled bread.

Notes

Fresh cranberries can be tart; consider folding in chopped pecans or walnuts for added texture and flavor. Avoid overmixing to keep the bread tender. Leftover bread is great toasted with butter.
