Preparation

  • Start by slicing the beef sirloin into thin strips, ensuring they are uniform for even cooking. Slice the mushrooms, chop the onion, and mince the garlic. Set these aside.
  • Bring a large pot of water to a boil and cook the egg noodles according to package instructions until al dente. Once done, drain and set aside.

Cooking

  • In a skillet over medium-high heat, add olive oil. Once hot, sear the beef strips for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  • In the same skillet, add a bit more olive oil and the tablespoon of butter. Sauté the onions until translucent, then add the garlic and mushrooms, cooking until tender.
  • Sprinkle the flour over the sautéed vegetables and stir well. Gradually pour in the beef broth, stirring continuously. Let this mix simmer for 2-3 minutes to thicken.
  • Return the seared beef to the skillet. Stir in the Worcestershire sauce, sour cream, and Dijon mustard, mixing until everything is coated. Season with salt and pepper and gently heat through.
  • Plate the stroganoff over the prepared noodles, garnishing with fresh parsley.

Notes

To lighten the dish, consider swapping sour cream for Greek yogurt or using whole wheat noodles. Avoid overcooking the beef and always taste the sauce to adjust seasoning.
