  • 1.5 lbs beef chuck or stew meat, cut into 1-inch cubes providing a tender and juicy base for the dish

  • 5 medium carrots, peeled and cut into matchsticks contributing vibrant color and crunchy texture
  • 0.5 cup oil (vegetable, canola, or olive) to enhance flavor
  • 2-3 teaspoons salt adjust to taste
  • 0.5 teaspoon freshly ground black pepper for warmth
  • 1-2 teaspoons ground cumin for an earthy, aromatic quality
  • 0.5 teaspoon turmeric (optional) for color
  • 1 whole head garlic (peeled outer layer, top cut off) to infuse the dish with rich flavor
  • 2.5-3 cups long- or medium-grain rice (e.g., Basmati or Calrose), rinsed for fluffiness
  • 5-6 cups hot water or beef broth to cook the rice and beef to perfection

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • Heat the oil over medium-high heat in a large pot.
  • Sear the beef, seasoning it with salt and pepper until browned on all sides.
  • Add the chopped onions and cook until translucent, about 4-5 minutes.
  • Stir in the matchstick carrots, ground cumin, turmeric, and black pepper, cooking until the carrots begin to soften, approximately 3-4 minutes.
  • Pour in hot water or beef broth to cover the mixture and bring to a boil.
  • Reduce the heat and let it simmer until the beef is tender, about 1.5 to 2 hours.
  • Layer the rinsed rice over the top, tuck the whole garlic head into the rice, and pour in the remaining liquid.
  • Cover the pot and cook on low heat until the rice is tender and the liquid has been absorbed, about 30-40 minutes.
  • Let the pilaf sit covered for at least 10 minutes before serving.
  • Fluff the rice gently with a fork before plating.

Notes

For added flavor, consider marinating the beef ahead of time. Adjust the seasoning according to your palate and incorporate red pepper flakes or diced chili peppers for heat.
