Instructions
 

Preparation

  • In a large Dutch oven or soup pot, heat the olive oil over medium heat until shimmering.
  • Add the diced onion and potatoes, cooking for about 3–4 minutes until the onions are translucent and the potatoes begin softening.
  • Stir in the minced garlic and cook for an additional 1–2 minutes.

Cooking

  • Add the tomato paste, Italian seasoning, and red pepper flakes, continuing to cook for another 5 minutes.
  • Pour in the fire-roasted tomatoes (with juices), drained white beans, and vegetable broth. Stir everything together.
  • Reduce the heat to low, cover partially, and let the soup simmer uncovered for about 20 minutes.
  • Finally, stir in the heavy cream and grated Parmesan cheese. Adjust seasoning with salt and pepper.

Serving

  • Serve hot, garnished with extra red pepper flakes, Parmesan, or fresh herbs.

Notes

For a thicker soup, blend it partially or entirely with an immersion blender. This soup pairs wonderfully with a warm baguette or grilled cheese sandwiches.
