  • 2 tablespoons olive oil rich and fragrant
  • 1 small onion, finely chopped adding sweetness
  • 2 cloves garlic, minced with intense aromatic properties
  • 2.25 cups chicken or vegetable broth enhancing the rice's flavor
  • 1 teaspoon dried oregano offering a touch of earthiness
  • 1 each juice and zest of 1 lemon giving a bright and zesty flavor
  • to taste salt and pepper seasoning the dish perfectly
  • 2 tablespoons chopped parsley fresh and vibrant

Preparation

  • Heat the olive oil in a medium saucepan over medium heat until it shimmers.
  • Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
  • Introduce the minced garlic and sauté for 30 seconds until fragrant.
  • Pour in the rice and toast for 1-2 minutes.
  • Pour in the broth, sprinkle in the oregano, and season with salt and pepper; stir to combine.
  • Bring to a gentle boil, reduce heat to low, cover, and let simmer for 15-18 minutes.
  • Once done, remove from heat and stir in the lemon juice, zest, and parsley.
  • Fluff the rice with a fork and top with optional crumbled feta or fresh dill before serving.

Notes

For an extra lemony flavor, consider adding more lemon juice before serving. Toast the rice carefully to avoid dryness. This recipe can be easily doubled or halved.
