Preparation

  • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, chopped parsley, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat.
  • Shape the mixture into meatballs, about 1 inch in size.

Cooking

  • Heat 2 tablespoons of butter in a large skillet over medium heat. Add the meatballs and cook until evenly browned on all sides and cooked through, approximately 8-10 minutes.
  • Remove the meatballs from the skillet and set aside.
  • In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Stir in the chicken broth, lemon juice, and red pepper flakes (if using). Simmer for 2-3 minutes.
  • Return the meatballs to the skillet, spooning the sauce over them. Cook for another 2 minutes to heat through.
