  • 1 box (3.4 ounces) instant lemon pudding Provides tangy lemon flavor.

  • 6 tablespoons lemon juice Enhances the lemon flavor.
  • 8 ounces Cool Whip Whipped Topping Adds creaminess to the pie.

For the raspberry layer

  • 12 ounces fresh raspberries Bursting with flavor.
  • 2 tablespoons sugar Enhances the natural sweetness of the raspberries.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) to prepare for the crust.
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
  • Press this mixture firmly into a greased pie pan, ensuring it’s evenly distributed.
  • Bake the crust for 9-10 minutes until it turns a golden brown. Let it cool once done.

Filling

  • While the crust cools, whisk together the lemon pudding mix and milk in a separate bowl until it thickens.
  • Stir in the freshly squeezed lemon juice.
  • Fold in the Cool Whip until the mixture is smooth and creamy.

Assembly

  • Blend the raspberries with 2 tablespoons of sugar to create a raspberry puree.
  • Layer half of the lemon filling into the cooled crust. Pour the raspberry puree over this layer.
  • Top it with the remaining lemon filling. Each layer should resemble a beautiful sunset.
  • Cover the pie and freeze it for at least 3 hours.

Serving

  • Allow the pie to thaw slightly before slicing for easier serving.
