French Onion Beef Stew with Cheesy Bread Topping

  • 1.5 lbs beef chuck, cut into bite-sized cubes Use a good quality beef for better flavor.
  • 2.5 cups beef broth Homemade or store-bought.
  • 2 tbsp unsalted butter Can be substituted with a heart-healthy oil.
  • 2 tbsp olive oil To help brown the beef.

Vegetable Ingredients

  • 5 large onions, sliced thinly Uniform slices for even caramelization.
  • 4 cloves garlic, minced Fresh garlic for best flavor.
  • 1 tbsp brown sugar Enhances caramelization of onions.
  • 1 tbsp all-purpose flour For thickening the stew.
  • 2 leaves bay leaves Adds depth of flavor.
  • Fresh thyme Fresh thyme, to taste Use more if desired for flavor.

Topping Ingredients

  • 1 white baguette crusty and fresh For the cheesy topping.
  • 1.5 cups shredded Gruyère cheese Can substitute with other melting cheeses.
  • 1 tbsp Dijon mustard For added flavor on the bread.

Preparation

  • Begin by slicing the onions thinly, ensuring they're uniform for even cooking.
  • Season the beef cubes generously with salt and pepper.

Cooking

  • In a Dutch oven over medium-high heat, sear the beef in batches until browned on all sides. Remove and set aside.
  • In the same pot, melt the butter and olive oil together. Add the sliced onions, brown sugar, and a pinch of salt. Sauté until the onions become deeply caramelized, about 15-20 minutes.
  • Stir in the minced garlic and fresh thyme, cooking for an additional five minutes until fragrant.
  • Sprinkle the flour over the onions and stir well. Gradually pour in the beef broth while scraping up any brown bits stuck to the bottom of the pot.
  • Return the seared beef along with the bay leaves; bring to a simmer.
  • Cover the pot and transfer it to a preheated oven set at 320°F (160°C). Let it cook for 1½ hours.

Preparation of Topping

  • While the stew cooks, preheat your oven to 375°F (190°C).
  • Slice the baguette and toast the slices lightly, then brush with olive oil. Spread a layer of Dijon mustard on top and generously sprinkle with shredded Gruyère cheese.

Serving

  • Once the stew is ready, divide it into ovenproof bowls, placing the cheese-topped bread on each. Broil for a few minutes until the cheese is melted and bubbly.

Notes

For a lighter version, consider using leaner cuts of beef or chicken breast, and whole grain bread for the topping. Allowing the stew to simmer at low heat enhances flavor.
