Preparation

  • Begin by melting the semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each until smooth.
  • Stir in the nut butter until completely combined, creating a creamy mixture.
  • Pour in the honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well blended.
  • In a large bowl, gently fold the crispy rice cereal into the chocolate mixture until they are coated.
  • Line a 9x9-inch baking dish with parchment paper to prevent sticking.
  • Pour the mixture into the lined baking dish and press down evenly with a spatula.
  • Refrigerate for 1 to 2 hours or until firm to the touch.
  • Remove from the dish using the parchment paper edges, and cut into squares or rectangles.

Notes

Try using dark chocolate for a richer flavor. You can also mix in nuts or seeds for added texture.
