Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray.
  • Steam or blanch the broccoli florets until tender, about 3 minutes. Drain and set aside.
  • In a medium saucepan over medium heat, melt the butter and whisk in the flour, cooking for about 1 minute until it forms a light roux.
  • Gradually add the milk and cream, whisking continuously until thickened (about 3-5 minutes).
  • Stir in 1½ cups of shredded cheddar cheese until melted and smooth. Season with garlic powder, onion powder, salt, and black pepper.

Assembly and Baking

  • In a large bowl, combine the cooked rice, chicken, steamed broccoli, and cheese sauce. Mix well.
  • Spread the mixture in the greased baking dish and top with remaining cheddar cheese, Parmesan, and breadcrumbs.
  • Bake for 20-25 minutes until bubbly and golden brown. Let it rest for 5 minutes before serving.

Notes

Use leftover chicken for convenience, substitute mushrooms for a vegetarian option, and customize veggies as desired.
