  • 2 pounds lean ground beef (or a mix of chicken/turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 0.5 cup milk
  • 2 large eggs
  • 0.75 cup breadcrumbs
  • 0.75 cup ketchup
  • 0.25 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • to taste Italian seasoning
  • to taste Salt
  • to taste Black pepper
  • to taste Parsley

Preparation

  • Preheat your oven to 350°F (175°C).
  • Sauté the chopped onion in butter over medium heat for about 3-4 minutes until softened.
  • Add minced garlic and cook for another 30 seconds.
  • In a mixing bowl, combine sautéed onions, ground beef, milk, eggs, breadcrumbs, ketchup, and seasonings; mix until just combined.
  • Shape the mixture into a loaf and place it in a greased loaf pan.

Cooking

  • Bake for 40 minutes.
  • For the glaze, mix ketchup, brown sugar, and apple cider vinegar in a bowl and spoon it over the meatloaf.
  • Bake for an additional 20-30 minutes until the internal temperature reaches 160°F (70°C).
  • Let it rest for 10 minutes before slicing.

Notes

To enhance your meatloaf, consider adding finely chopped vegetables like bell peppers or carrots. For a bit of spice, try adding hot sauce or jalapeños. Adjust seasoning to your personal taste. Serve with classic side dishes for a complete meal.
