For the topping

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • Line the bottom with parchment paper.

Crust

  • In a mixing bowl, combine chocolate graham cracker crumbs with melted butter until fully coated.
  • Press the mixture firmly into the bottom of the prepared pan and bake for about 10 minutes.
  • Allow the crust to cool completely.

Filling

  • In a large mixing bowl, beat softened cream cheese until smooth.
  • Gradually add granulated sugar, stirring until there are no lumps.
  • Add vanilla extract and eggs one at a time, mixing well after each addition.
  • Fold in sour cream gently until fully incorporated.
  • Pour the mixture over the cooled crust and smooth the top.
  • Bake for 55-60 minutes until edges are set, with a slight jiggle in the center.
  • Turn off the oven and let the cheesecake cool in the oven for an additional hour.

Chill

  • Chill the cheesecake in the refrigerator for at least 4 hours or preferably overnight.

Topping

  • Before serving, heat cherry pie filling in a small saucepan until warm.
  • Pour over the cheesecake and spread evenly.
  • Whip heavy cream to soft peaks and spread over the cherry layer.
  • Garnish with dark chocolate shavings and fresh cherries.

Notes

Make sure cream cheese is at room temperature before mixing. For a richer flavor, add espresso powder. You can substitute half the chocolate crumbs with regular graham cracker crumbs for a lighter crust.
