Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with butter.
  • In a medium bowl, combine the graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until fully combined and press into the bottom of the springform pan. Bake for 10 minutes and then let it cool.

Cheesecake filling

  • In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla, mixing well.
  • Incorporate the eggs one at a time, mixing thoroughly after each addition.
  • Fold in the sour cream to create a smooth mixture.

Assembly

  • Pour half of the batter over the cooled crust and swirl half of the cherry preserves into the batter. Pour the remaining batter on top and swirl in the remaining cherry preserves.

Baking

  • Bake for 50-60 minutes until edges are set, with a slightly jiggly center.
  • Turn off the oven, crack the door, and let the cheesecake cool for an hour.

Chilling and Serving

  • Refrigerate for at least 4 hours, preferably overnight.
  • Whip the heavy cream until stiff peaks form and spread over the cooled cheesecake. Garnish with cherries and dark chocolate shavings.
